This sculpted savoury aspic salad is a faithful homage to mid-century entertaining, when jellied dishes held court at formal luncheons and hotel buffets. Cast in clear, glass-like aspic, the piece reveals a meticulous arrangement of replica prawns, sliced egg, carrot, cabbage, pasta and herbs, suspended as if freshly set.
