This sculpted savoury aspic salad draws on the theatrical tradition of mid-century entertaining, when jellied dishes were designed to impress as much as to sustain. Cast in clear, glass-like aspic, the form encloses a carefully composed arrangement of replica octopus, prawns, sliced egg, cabbage, pepper and cucumber, suspended in precise, deliberate balance.
